INGREDIENTS
For the gyozas:

- 16 wafers for gyozas
- 250g raw peeled prawns
- Half a spring onion
- 2cm ginger
- 1/2 clove garlic
- 1 tablespoon soy sauce
- Salt
- Chopped chives
For the sauce:
-
- 5 tablespoons soy sauce
- 5 tablespoons rice vinegar
- 1 tablespoon sesame oil
ELABORATION
For the gyozas:

- Devein and chop the shrimp.
- Chop the spring onion, ginger and garlic.
- put all the ingredients in a bowl, add the soy sauce and a pinch of salt.
- Mix with a spoon and stir until a homogeneous dough is formed.
- Place a small portion of filling in the center of the dough. Moisten the edge with water and close forming folds.
For the sauce:

- Mix all ingredients and set aside.
FINISH AND PRESENTATION

- Place the gyozas in a non-stick frying pan with a tablespoon of oil and cook over medium heat until the base begins to brown.
- Add half a glass of water, cover the pan with a tight-fitting lid and steam for 3 minutes.
- Remove the lid and allow the water to evaporate completely.
- Transfer to a plate, sauté and finish by sprinkling with chopped chives.
